That's not a simple task however since there isn't a mode highlighting the borders while discoloring the rest of the map like there was in aoh2. I found two workarounds for this and they're actually pretty simple.

 

Method 1: 
Step 1: Open the political map

Step 2: Click on your country

Step 3: Press F7

Step 4: For steam, press F12

Example:

Method 2: 
Step 1: Declare war to a country (You could save beforehand and load that save afterwards)

Step 2: Get into the peace treaty screen (You need %90 or more war score)

Step 3: Press F7 and that will make the hud disappear. Leaving only your borders colored and any in-game menu hidden from the picture.

Step 4: Press F12 on steam. External screenshotting programs sometimes don't work but you could try it if you really want to.
