Maybe in different eras there would be different ships? like in the modern era cargo ships and in the mid 1800s to early 1900s you have steam ships

And also different lines for each era, for example in modern day there are ships going from America to Europe while in 1440 there aren't

Maybe the ships could be used to add trade? It would be automatic and generate income. Armies in water would destroy ships of an enemy, so blockades would be possible

I also think it's worth making the ships disappear immediately after touching land, in the video it seems to be traveling on land before disappearing upon arrival at their destination

Yeah, in the age of discovery, connections between Europe and America starts to be created.

maybe they would work as imagination of trade routes. This mechanic was planned in AOH2, but not impemented. I think that in third part it's be finnished.

Well, it would be logical if ships sailed more often to provinces with high income/producing a lot of resources

So could this be a sign that maybe things like railroads will be add that increase unit speed but consume gold?

Yes ! There must have more functions for wars such as reasons/cause, embargos, create a provisional government etc...
