Will this kind of siege be remove once you get to a certain era? (anything past the Victorian Era, and what i mean is that you take ONE province in a few ingame days)

All you need to do is insert fortifications in the scenario editor in each province. Then each province will have to be occupied separately

What about preparing in advance specific regions that AI must use in case of war in editor, aside from invasion plan for the player. They would use it to avoid random army moves and would focus on one specific region. And to make more realistic wars in the scenario.

this is already possible in AoC2, it's called sending your army (with the t button, or the mobile equivalent) to every province they have, then spam clicking spacebar/next turn button

Not just invasion but also other processes should be automatable. Maybe stackable and customisable orders etc.  For example , move army group 1 from province x to enemy province y then they will follow another order that could be anything (such as plunder or as a occupation force to prevent uprising/rebellion and causing a 2 frontal war), while other army groups go deep into the enemy territory.
